Breakfast for a Queen – Omelet

Today’s breakfast includes eggs, veggies, fruit, and grains.  All the components of a breakfast suitable to get you all the way to lunch.

The ingredients for my breakfast for two.

Ingredient List:

  1. Green Bell Pepper – diced
  2. Zucchini – diced
  3. Tomato – diced
  4. Mung Beans – sprouted
  5. Green Onion – sliced
  6. 3 eggs – whipped lightly

Cooking the omelet:

  1. Start adding veggies at will. Fill it up and make it look good.
  2. Cook for just a minute or 2, depending on the temp. of your pan.
  3. Turn half of the omelet over itself as shown in the next picture.
  4. Platter it up with some fruit, a slice of homemade bread, a bit of juice, and some water or milk if that is on your diet recommendations.

When it’s all said and done, keep any leftover sliced veggies in little containers for tossing on your salad at lunch and dinner, or into a soup.  Be creative and save time in the kitchen.
